I have no excuses for not writing in more than a week. I know my loyal readers look forward to these blog posts.
I did not run Saturday as planned. Life and the dogs conspired against me.
We’re still car free, and I’m riding my bicycle to work daily. Sunday I had to deal with fog. Monday, it was light snow flurries. The snow is not sticking. That is a good thing.
I’m glad I got new batteries for my headlight and tail light. I did not realize how weak the tail light had gotten until I put the new batteries in. The headlight had needed batteries for a while.
I had no Meatless Monday idea this week. I cooked chili for lunch on Sunday, and on Monday my wife fixed a baked pasta dish and a sweet potato salad. I give the salad a resounding thumb’s up.
We put up our Christmas tree Monday.
The recipe for the sweet potato salad is pretty straight forward:
One large sweet potato grated ( I ran it through the food processor with some celery leaves)
Sautee in water for about five minutes, not long enough to get mushy, just enough to soften it up
One cup of almond slivers (or whole almonds run through the food processor)
Half cup of raisins.
Mix together
You could sweeten it with a little honey or maple syrup
